Slovak Roquefort – it is a delicious aged cheese with noble blue mold Penicilium roqueforti<\/em>, featuring a typical marbled structure of bluish molds on a creamy white surface. Its traditional production, throughout the entire process from filling the rennet into vats, shaping, salting, ripening, and packaging, is still manual, making each cheese wheel unique and under constant control. The ripening process alone, in a special warehouse on wooden racks, takes at least 3 to 5 weeks, during which the noble mold mentioned grows in the cheese. However, the cheese’s maturation period can last up to 6 months, during which the cheese becomes softer, acquires a more spreadable consistency, and a spicier flavor, especially sought after by gourmets. <\/span><\/p>\n

All blue cheeses from our company, such as NIVA ORIGIN\u00c1L and NIVA ORIGIN\u00c1L ZLAT\u00c1, are registered under the NIVA ORIGIN\u00c1L trademark. They are produced according to a traditional, almost seventy-year-old recipe from Hlohovec, exclusively from Slovak milk, predominantly from farmers in the Tekov region. Thanks to all these parameters, NIVA ORIGIN\u00c1L cheese has an unmistakable delicious, salty, spicy taste, suitable for use in both cold and hot cuisine. <\/p>\n
