Semi-hard non-ripening full-fat portioned cheese, made exclusively from cow's milk. Its ripening time is set to leave as much lactose in the cheese as is beneficial for quality frying. If the shorter ripening time is not observed, the cheese will melt. For frying, it is good to use fresh cheese, without unnecessary storage, at which time the fresh cheese still has a slightly “squeaky” consistency.
