TEKOVSKÝ SALAMI CHEESE is the main and most well-known representative of natural ripened cheeses from our company. It is made exclusively from Slovak cow’s milk, carefully produced by farmers, mainly from the Tekov region. It contains no vegetable fats, preservatives, or colorants. It is produced using traditional manufacturing methods with a high proportion of precise manual work throughout the entire process. The cheese curd is spread manually in vats, giving the cheese a uniform structure. After pressing, the cheeses are carefully removed by hand, manually processed into their final form, and stored for ripening, which takes several weeks, during which the cheeses acquire their typical delicious cheese flavor. Through this unique production process, Tekovský salami cheese has become the bearer of a rich cheese-making tradition in the Tekov region, in whose heart it is produced. Tekovský salami cheese is the only Slovak natural cheese that holds the prestigious European certificate “Protected Geographical Indication”. It received this certificate for its decades-proven traditional recipe, based on the classic production method, maintaining a high proportion of precise manual work. It is produced in two variants, unsmoked and smoked, the latter being smoked using the traditional method with beech wood.
