Curd Cheese Balls with Strawberry Topping

Ingredients:

500 g Grandma’s Curd Cheese

120 g wholemeal spelt semolina (or regular baby semolina)

2 eggs

salt

Sauce:

500 g strawberries

6 tbsp water

100 g sugar

1 tbsp cornstarch

juice of 1/2 lemon

Instructions:

Strawberry season has always been my favorite. I associate it with the end of the school year, the approaching summer, and a garden full of fruit. Now that I live in the city, it’s not as simple. However, it is still a time when fresh fruit is much more accessible. And besides enjoying strawberries raw, we must never skip excellent curd cheese dumplings.

Instructions

Prepare the dumpling dough by mixing curd cheese, semolina, 2 eggs, and a pinch of salt. Knead into a non-sticky dough. Wrap a strawberry in a piece of dough and form into dumplings. Place the finished dumplings into boiling salted water and cook until they float to the surface. Serve with strawberry sauce. Bring the strawberries to a boil with sugar and let them simmer slightly. Thicken with cornstarch dissolved in cold water and cook for a little longer. Finally, season with lemon juice.
