TEKOVSKÝ SALÁMOVÝ SYR is the primary and most renowned representative of our company’s natural aged cheeses. It is made exclusively from Slovak cow’s milk, carefully produced by farmers, mainly from the Tekov region. It contains no vegetable fats, preservatives, or artificial colors. It is produced using traditional methods with a high proportion of precise manual labor throughout the entire process. The cheese curds are manually spread in vats, which gives the cheese a uniform texture. After pressing, the cheeses are carefully hand-selected, manually shaped into their final form, and stored for ripening, which lasts several weeks, during which they acquire their typical delicious cheese flavor. Through this unique production process, Tekovský Salámový Syr has become a bearer of the rich cheesemaking tradition in the Tekov region, where it is also produced. Tekovský Salámový Syr is the only Slovak natural cheese that holds the prestigious European certificate “Protected Geographical Indication”. It received this certificate for its traditional recipe, verified over decades, based on classic production methods, while maintaining a high proportion of precise manual labor. It is produced in two variants: unsmoked and smoked, the latter being smoked in the traditional way over beech wood.
