I recently made a carrot cake that was very much enjoyed by my daughters, who are quite picky about sweets. This time, I decided to try it in the form of a Swiss roll, and it turned out to be an even bigger treat. Moreover, it contains healthy carrots and cottage cheese. So I’m satisfied with this dessert as well.
Instructions
Beat the eggs with sugar until foamy. Add oil, all-purpose flour with baking powder. Season with cinnamon and lemon zest. Finally, add finely grated carrots. Pour onto a baking sheet lined with parchment paper and bake at 180°C for about 12 minutes. Remove from the oven, roll up in a damp towel, and let it cool.
For the cream, beat softened butter with sugar. Add cottage cheese, which can be slightly blended first. Flavor with vanilla. Fill the roll, roll it up, and let it rest in the refrigerator.
