Slovak Roquefort – is a delicious aged cheese with noble blue mold Penicillium roqueforti, featuring a typical marbled structure of bluish molds on a creamy white surface. Its classic production process, from filling the curd into vats, forming, salting, ripening, and packaging, is still manual, making each cheese wheel unique and under constant control. The ripening itself in a special warehouse on wooden racks takes at least 3 to 5 weeks, during which the aforementioned noble mold grows in the cheese. However, the cheese’s maturation period can last up to 6 months, during which the cheese becomes softer, acquires a more spreadable consistency, and a spicier flavor, especially sought after by gourmets.
All blue cheeses from our company, such as NIVA ORIGINÁL and NIVA ORIGINÁL ZLATÁ, are protected under the NIVA ORIGINÁL trademark. They are produced according to a traditional, almost seventy-year-old recipe from Hlohovec, exclusively from Slovak milk, predominantly from farmers in the Tekov region. Thanks to all these parameters, NIVA ORIGINÁL cheese has an unmistakable delicious, salty, spicy taste, suitable for use in both cold and hot cuisine.
