What cakes are synonymous with Christmas for you? For me, gingerbread cookies and these very yeast curd cakes immediately come to mind. Although we enjoy preparing them throughout the year, they are an essential part of our Christmas celebration. And the type of curd cheese you use truly matters; with this full-fat curd cheese, they simply taste festive.
Instructions:
Prepare a starter from the yeast, a teaspoon of sugar, a little flour, and half of the lukewarm milk, and let it rise for a while. Mix the flour, milk, butter, sugar, and egg, then add the starter. Knead the dough and let it rise for about half an hour.
Mix the curd cheese with vanilla sugar and an egg. Roll out the dough and use a glass to cut out circles, placing them on a baking sheet lined with parchment paper. Brush the edges with beaten egg, then place a spoonful of curd cheese filling and a small spoonful of jam on each circle. Let them rise briefly on the baking sheet, then bake at 180°C for about 15 to 20 minutes. After removing from the oven, you can brush them with whipped cream while still warm.
